That is the question- I presently have a G2 coated on my Pearl "Dixie" steel-shelled snare and was curious if anyone makes a 2-ply coated with thinner plies. Seems that heads with a control ring built in give too much ring control, especially at mid-low tunings...PLOP. The G2 coated is OK, but what else is there that may be slightly thinner? Anyone try a Studio-X on a snare?
What is the "thinnest" 2-ply head?
Hmmm, why not just get a good quality single-ply, Tev? I think you can get some 7mill stuff from Evans and REMO.

Check out Attack brand heads. I think they used to have real thin 2 ply heads.
Why not give Remo's Vintage A heads a try? 2-ply and only 10.5 mil thick/thin! Lots of positive reviews from other VDF members. I tried a 12" and 16", in Ambassador weights, on my 1967 Slingerland kit and they sounded great! Here's a link; http://remo.com/portal/products/3/8/50/702/co_vintage_a.html

Give either an Evans Power Center Reverse Dot (10 mil with 5 mil patch on the bottom), Remo Controlled Sound (looks like an Ambassador with a patch) or a Remo Controlled Sound X (12 mil with black 5 mil patch on the bottom).

I have many snares with the Evans Power Center Reverse Dot and a Rogers Luxor with the Remo Controlled Sound X.
They both have nice overtones when hit off-center and a great well defined "crack" when hit within the center sweet spot.
