When you guys re-wrap a shell, if the wrap end up a little to much over the edge of the shell, how do you trim it?

Scissors, Then use a fine tooth file and gently smooth the edge
I use a sharp razor knife, and then the proper router bit on the router table to match the outer roundover or countercut contour.
I too use a razor knife to cut off excess then a good medium file to shape and contour then a sanding block with 120 grit wet or dry to put final finish on it..
+1 Razor knife/sanding block.
