Flat cut wood will take stain different then other cuts, especially maple. Maple is a hard wood to stain to begin with.

As far as stain goes, it depends what you want to achieve.
Oils are very transparent and tend to bring out figure.
Alcohol base will do much the same while also tinting the flat areas. Basically a dye.
Water-base will bring out grain and since it's semi opaque, will tend to mask figure. Allows great control in blending however. Can be lightened by sanding.
The other 2, not so much, especially the alcohol based.
The trick is to know/learn how to combine the techniques to achieve a desired result.
Still learning myself so...
As far as Super high gloss.
No matter what you finish with, you will have to buff out and wax lots.
I like acrylic lacquer, you may like sumthin else.
Buy a beer for a good finish guy after work and start talkin about his work. ;)
